Canadian Cheese Soup Recipe -Traditional Canadian Food Recipes

Ingredients:
  • 5 T butter or margarine
  • 2 medium carrots, finely chopped
  • 2 ribs celery, finely choppedCedar Plank Salmon Recipe
  • 1 medium onion, finely chopped
  • 1/2 green pepper, seeded and finely chopped
  • 4 to 5 mushrooms, cleaned and finely chopped
  • 1/2 c cooked ham, finely chopped, if desired
  • 1/2 c flour
  • 2 T cornstarch
  • 1 qt chicken broth
  • 1 qt milk
  • 1/2 t paprika
  • 1/4 to 1/2 t cayenne
  • 1/2 t dry mustard, if desired
  • 1 lb process sharp Premium White Cheddar Cheese , grated
  • Salt and freshly ground black pepper, if desired

Directions:
  1. In large heavy soup pot, melt butter or margarine; add carrots, celery, onion, green pepper, mushrooms and ham, if desired. Cook over medium heat until vegetables are crisp tender, about 10 minutes, stirring occasionally.

  9. Makes about 2 1/2 quarts soup3 minutes. Add broth and cook, stirring constantly, until slightly thickened.
  10. Add milk, paprika, cayenne and mustard, if desired. Add cheese gradually, stirring constantly, until cheese is melted.
  11. Do not allow soup to boil after cheese is added because it will curdle.

Cedar Plank Salmon Recipe -Traditional Canadian Food Recipes

Ingredients:

  • 1 lemon or orange, juice and zest
  • 1 Tbsp. chopped fresh basil
  • 1/2 tsp. salt

  2. Meanwhile, soak a piece of untreated cedar plank in cold water for about 2 hours (weighing it with something heavy.

Roast Beef Recipe -Traditional Canadian Food Recipes

Ingredients:
  • Roasting cut of meat (we like standing rib the best)
  • This recipe is for a 2 to 3 lb.
  • Roast your favorite rub or we like to use Clubhouse Brand :la grille smoked hickory pasteor Cattle Boyz BBQ
  • Sauce.(it is a bbq sauce that is spicy and hardly any sugar in the sauce)

Directions:
  1. Heat oven to 500 degrees F.
  2. Rub seasonings or paste on roast
  3. Place in roasting pan, uncovered and put in oven for 20 minutes at 500.
  4. Turn oven down to 200 and leave roast in oven uncovered for 45 minutes to 1 hour.
  5. This will usually make a medium rare roast but it would depend on the size you cook.
  6. If you like it more done leave it a bit longer. We like ours rare.
  7. Then, when you remove the roast, pour the consomme in the roasting pan and add potato water or just water to your taste....saltiness.. to make a delicious au jous or thicken to make a tasty gravy.
This may seem to be a strange way to cook the roast but we have never been disappointed. It turns out juicy and tender. It is worth spending the extra money on a good cut of meat. I swear this is just as good if not better than some of the finest prime rib dinners I have had in restaurants. Traditional Canadian Food Recipes

Tarte au Sucre or Sugar Pie -Traditional Canadian Food Recipes

Ingredients:
  • 1 recipe pastry for a 9 inch single crust Natural Pies
  • 3 eggs
  • 7/8 cup
  • light brown sugar
  • 3/4 cup real maple syrup
  • 6 tablespoons unsalted butter, melted
  • 1/4 cup brewed tea
  • 6 1/2 teaspoons cider vinegarTraditional Canadian Food Recipes
  • 1 pinch salt
  • 3/4 cup toasted chopped walnuts

Directions:
  1. Roll out the dough, and fit it in a 9 inch pie pan. Crimp the edges.
  2. Chill while preparing filling.
  3. In a bowl, whisk together the eggs and sugar. Add the syrup, butter, tea, vinegar, and salt.
  4. Whisk until smooth. Stir in the nuts.
  5. Place the pie shell on a cookie sheet, and pour the filling into the shell. Bake in a preheated 450 degree F (230 degrees C) oven for 10 minutes.
  6. Lower the heat to 350 degrees F (175 degrees C), and bake until the center is still a bit wiggly.
  7. It will set completely when cooled, about 25 minutes. Cool, and serve with sweetened whipped cream.Traditional Canadian Food Recipes.
