Canadian Cheese Soup Recipe -Traditional Canadian Food Recipes
Ingredients:
- 5 T butter or margarine
- 2 medium carrots, finely chopped
- 2 ribs celery, finely
chopped

- 1 medium onion, finely chopped
- 1/2 green pepper, seeded and finely chopped
- 4 to 5 mushrooms, cleaned and finely chopped
- 1/2 c cooked ham, finely chopped, if desired
- 1/2 c flour
- 2 T cornstarch
- 1 qt chicken broth
- 1 qt milk
- 1/2 t paprika
- 1/4 to 1/2 t cayenne
- 1/2 t dry mustard, if desired
- 1 lb process sharp
Premium White Cheddar Cheese
, grated
- Salt and freshly ground black pepper, if desired
Directions:
- In large heavy soup pot, melt butter or margarine; add
carrots, celery, onion, green pepper, mushrooms and ham, if desired.
Cook over medium heat until vegetables are crisp tender, about 10
minutes, stirring occasionally.
- Do not brown. Add flour and cornstarch and cook, stirring

Cedar Plank Salmon Recipe -Traditional Canadian Food Recipes
Ingredients:
- 1 Salmon Fillet
, about 1 1/2 lbs (or 4 steaks)
- 1/4 cup olive olive
- 1 lemon or orange, juice and zest
- 1 Tbsp. chopped fresh basil
- 1/2 tsp. salt
- 1 tsp frshly ground black pepper

- Marinate the salmon in remaining ingredients.
- Meanwhile, soak a piece of untreated cedar plank in cold
water for about 2 hours (weighing it with something heavy.
- Place the salmon on plant.
- Put the plank directly on the barbecue grill. Close the lid
- Cook over medium-high heat for 10-20 minutes depending on
required doneness.

Roast Beef Recipe -Traditional Canadian Food Recipes
Ingredients:
- Roasting cut of meat (we like standing rib
the best)
- This recipe is for a 2 to 3 lb.
- Roast your favorite rub or we like to use Clubhouse Brand

- Sauce.(it is a bbq sauce that is spicy and hardly any sugar
in the sauce)
- 1 can consomme

Directions:
- Heat oven to 500 degrees F.
- Rub seasonings or paste on roast
- Place in roasting pan, uncovered and put in oven for 20
minutes at 500.
- Turn oven down to 200 and leave roast in oven uncovered for
45 minutes to 1 hour.
- This will usually make a medium rare roast but it would
depend on the size you cook.
- If you like it more done leave it a bit longer. We like
ours rare.
- Then, when you remove the roast, pour the consomme in the
roasting pan and add potato water or just water to your
taste....saltiness.. to make a delicious au jous or thicken to make a
tasty gravy.
This may seem to be a
strange way to cook the roast but we have never
been disappointed. It turns out juicy and tender. It is worth spending
the extra money on a good cut of meat. I swear this is just as good if
not better than some of the finest prime rib dinners I have had in

Tarte au Sucre or Sugar Pie -Traditional Canadian Food Recipes
Ingredients:
- 1 recipe pastry for a 9 inch single crust Natural Pies

- 3 eggs
- 7/8 cup
- light brown sugar
- 3/4 cup real maple syrup
- 6 tablespoons unsalted butter, melted
- 1/4 cup brewed tea
- 6 1/2 teaspoons cider vinegar

- 1 pinch salt
- 3/4 cup toasted chopped walnuts
Directions:
- Roll out the dough, and fit it in a 9 inch pie pan. Crimp
the edges.
- Chill while preparing filling.
- In a bowl, whisk together the eggs and sugar. Add the
syrup, butter, tea, vinegar, and salt.
- Whisk until smooth. Stir in the nuts.
- Place the pie shell on a cookie sheet, and pour the filling
into the shell. Bake in a preheated 450 degree F (230 degrees C) oven
for 10 minutes.
- Lower the heat to 350 degrees F (175 degrees C), and bake
until the center is still a bit wiggly.
- It will set completely when cooled, about 25 minutes. Cool,
