Pepper Onion Round Steak

Ingredients

  • 2 1/4 pounds thin top round steak, sliced into strips about 1/4-inch thick
  • 1 1/2 tablespoons Essence, recipe follows
  • 1/4 cup vegetable oil
  • 3 tablespoons all-purpose flour
  • 3 cups chicken broth, divided
  • 6 cups sliced onions
  • 2 cups sliced red and green bell peppers
  • 3 teaspoons salt
  • 1/2 teaspoon cayenne
  • 1/2 teaspoon freshly ground black pepper
  • 1 tablespoon freshly chopped parsley leaves
  • White rice, for serving, optional

Cooking Instructions

  • Combine the meat with the Essence and flour in a mixing bowl and toss to combine.
  • Heat the oil in a large cast iron Dutch oven or high-sided skillet over medium-high heat and brown the meat, in batches, until browned on all sides, 4 to 5 minutes.
  • Add 2 cups of the chicken broth and stir, scraping the bottom and sides of the pan to loosen any browned particles.
  • Add the onions, bell peppers, salt, cayenne, and black pepper.
  • Cook, stirring frequently, for 6 to 8 minutes, or until the vegetables are wilted.
  • Reduce the heat to medium. Cover and cook, stirring occasionally, for 15 minutes.
  • Add the remaining cup of broth and continue to cook, uncovered, for about 1 hour longer, or until the meat is very tender and the gravy is thickened and flavorful.
  • Add the parsley and serve immediately over white rice, if using.

Broiled Top Round Steak

Ingredients

  • 1 tablespoon olive oil
  • 2 teaspoons salt
  • 1/4 teaspoon coarsely ground black pepper
  • 1 large top round steak, about 1 1/2 inches thick, 2 to 3 pounds

Cooking Instructions

  • Preheat broiler.
  • Combine oil, salt, and pepper; rub all over the steak.
  • Place steak on a rack in broiler pan.
  • Place pan about 4 to 6 inches from heat and broil for 10 minutes.
  • Turn and broil 10 to 15 minutes longer or until desired doneness.
  • Place steak on a carving board.
  • Slice steak thinly and serve with baked potato and a salad, if desired.

Round Steak Roll-Ups

Ingredients

  • 1/2 cup long-grain rice, uncooked
  • 1/4 teaspoon thyme, crushed
  • 1/4 teaspoon ground marjoram
  • 1/4 cup sliced green onion, with green
  • 1/4 cup chopped green bell pepper
  • 1/4 cup chopped red bell pepper
  • 1 can (4 ounces) mushrooms, drained
  • 2 tablespoons butter
  • 2 pounds round steak, about 1/2-inch thick
  • 2 tablespoons vegetable oil
  • 1/2 envelope dry onion soup mix (1/4 cup)
  • 1 cup water
  • 1/3 cup cold water blended with 2 tablespoons flour

Cooking Instructions

  • Cook rice according to package directions until tender; drain if necessary.
  • Stir in thyme and marjoram, green onion, green and red pepper, mushrooms, and butter.
  • Cut steak in 6 pieces; pound each piece to about 6x4 inches..
  • Spread steaks with the cooked rice; roll up and fasten with toothpicks.
  • In a large heavy skillet, heat oil over medium heat.
  • Brown steak rolls; add soup mix and 1 cup water.
  • Cover and simmer for 1 1/2 hours.
  • Stir in flour and water mixture. Cook, stirring, until thickened.

Barbecued Top Round Steak

Ingredients

  • 1 to 1 1/2 pounds round steak, about 1 1/2 inches thick
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • 1/4 cup vinegar
  • 1 tablespoon packed brown sugar
  • 1 teaspoon paprika
  • 2 tablespoons Worcestershire sauce
  • 1/2 cup ketchup
  • 1 teaspoon salt
  • 1 teaspoon dry mustard
  • 1/4 teaspoon pepper

Cooking Instructions

  • Cut round steaks into crosswise slices about 1/2 inch wide.
  • Heat oil; brown steak on all sides.
  • Use a slotted spoon to remove meat to a baking dish; set aside.
  • Pour off fat, then place remaining ingredients in skillet;
  • bring to a boil then reduce heat and simmer for 2 minutes.
  • Pour over steak, cover tightly with foil, and bake at 350° for 1 hour.
  • Uncover and bake for 30 minutes longer.
  • Serve with rice or potatoes and a salad.

Texas Chili Round Steak Slices

Ingredients

  • 2 pounds top round steak, cut 2-inches thick
  • Instant meat tenderizer
  • 1/2 cup chopped onion
  • 2 tablespoons instant minced onion
  • 2 cloves garlic
  • 1/4 cup oil
  • 3 tablespoons vinegar
  • 3 tablespoons Worcestershire sauce
  • 1 tablespoon chili powder
  • 2 cans (8 oz. size) tomato sauce
  • 1/4 cup brown sugar
  • 1 teaspoon dry mustard
  • 2 tablespoons lemon juice
  • 1/2 teaspoon liquid smoke
  • 1 dash hot pepper sauce
  • 8 small rolls

Cooking Instructions

  • Sprinkle meat with meat tenderizer according to package directions.
  • In small bowl, make marinade by combining onion, garlic, oil, vinegar, Worcestershire sauce and chili powder. Place steak in shallow glass baking dish. Pour marinade over meat. Store in refrigerator at least 3 hours or overnight.
  • Remove steak from marinade. In large saucepan, combine marinade with remaining ingredients. Bring to a boil, stirring occasionally. Simmer 10 minutes.
  • Place steak on broiler pan. Broil 3 to 5 inches from heat, about 15 to 20 minutes, or until medium rare.
  • Slice steak very thinly. Add to barbecue sauce; cover and simmer gently about 30 minutes. Serve on small rolls.

Ingredients

  • 3 Oz Beef top round steak(sliced)
  • 2 Tbl Unsweetened pineapple juice
  • 1/2 Tsp Mace
  • 1 Pineapple slice(unsweetened)

Cooking Instructions

  • Pound slices of round steak with mallet or edge of plate until thin
  • Sprinkle both sides with mace
  • Place in aluminum foil
  • Sprinkle with pineapple juice; top with pineapple slice
  • Secure foil tightly
