Pan Fry Steak
I personally prefer my Pan Fry Steak as the full contact of heat to
meat produces a seriously delicious crust. If you do prefer your
sirloin seared with those picturesque hatch marks, you can use an
indoor grill pan for excellent results.
What's - Pan Fry Steak
Pan Fry Steak is a
relatively quick and
easy way to cook many cuts of steaks, and if you're using a non-stick
pan, can be done without the use of fat. If the piece of meat is too
thick however, there is a risk of the outside burning while the centre
doesn't cook through. Whilst this might be acceptable for those who
like their meat rare, it is not always desirable. As such, it's
important to only pan fry cuts that are no more than 2cm thick.
Many cuts are suitable to
pan fry,
including fillet steak, scotch fillet, porterhouse or sirloin steak,
T-bone steak, topside steak, round steak, medallions, cube steak or
cutlet, rib eye steak or cutlets. You can also pan fry mini roasts

Pan Fry Steak Recipe 1
Ingredients
- Steak cut of your choice
- Flaked salt
- Freshly ground black pepper
- Butter or oil (optional, depends on pan used)
- Favourite herbs and spices, spice mixes or marinades
(optional)
Cooking Instructions
- Preheat the pan to high.
- Add a little butter and oil to the pan (for a non-stick
pan) and allow the butter to melt.
- Season the meat with salt, pepper, herbs and spices, or
spice mixes. You can also marinate the steak before cooking.
- If the steak has any fat running along its edge, make small
cuts in it at 2cm intervals to prevent it from curling in the pan.
- Place the steak into the pan (be careful not to overload
the pan if you're cooking more than one piece at a time).
- Cook for the recommended time according to the Cooking Time
charts,
making sure to only turn the steak once during the cooking time.
- When the steak is cooked to your liking, transfer it to a
plate, cover loosely with foil
- Set aside for 5 minutes to rest. It is important to rest
before serving as it allows juices and heat to redistribute.
- Serve with desired accompaniments
Pan Fry Steak Recipe 2
Ingredients
- 1 large Steak
- 2 medium sized shallots
- 1/2 cup beef stock
- 1/4 cup balsamic vinegar
- Salt & Pepper
- 1 teaspoon butter
- extra virgin olive oil
Cooking Instructions
- Place pan on medium-high heat. While pan is heating, rub
the steak on both sides with salt and pepper to taste.
- Coat the pan with olive oil. When the oil starts to smoke,
put the steak in the pan. Resist the urge to move the steak around!
- Depending on the cut, you will flip the steak over in about
4 minutes for medium-rare, and cook for another 4-5 minutes.
- While the steak is cooking, finely dice the shallots.
- When the steak is done, remove the steak from the pan and
set it aside to rest. Do not cut into the steak until it has rested.
- Put a pat of butter in the pan, and throw the shallots in.
They
should cook very quickly and may begin to stick to the bottom of the
pan. Once they begin to brown, pour the vinegar over them and scrap the
bottom of the pan clean (deglaze). Keep your face away from the pan and
avoid the fumes during this part!
- When the vinegar starts to thicken (should happen quickly),
add the
beef stock and stir. Allow mixture to simmer for 2-3 minutes. If you
like a thicker sauce, you may add some arrowroot powder, but make sure
to stir it in quickly and evenly.
- Split sauce into two small bowls. Serve with the steak,
some mashed potatoes, and steamed broccoli.
Pan Fry Steak Recipe 3
Ingredients
- 1 table spoon of coarse salt
- 2 teaspoons pepper
- 1 teaspoon garlic powder of 2-3 cloves minced
- 1 teaspoon of sage
- 1 teaspoon of thyme
- 1 teaspoon of rosemary
Cooking Instructions
- Mix this together in a small bowl and then rub it onto the
steak.
Ideally, it should sit at room temp. with the rub on it for a half
hour, covered loosely.
- Add 2-3 table spoon of butter to frying pan on meadium
heat.
- Before the butter starts to burn, with the pan as hot as it
can be
without the butter smoking, add the steaks and let them sizzle without
moving or touching ithem for three-five minutes depending on the
thickness of the steak.
- Turn it over and cook other side for about three minutes
and voila!
- You should have some excellent juicy pan-fried steak.
Pan Fry Steak Recipe 4
Ingredients
- 1 sirloin steaks
- 2 shallots
- 1 teaspoon green peppercorns
- 2 teaspoons coarse grain mustard
- 2 tablespoons brandy
- 225 ml strained Greek yoghurt or 150 ml single cream
- Juice of 2 lemon
- Salt and freshly ground black pepper
Cooking Instructions
- Trim excess fat from the steaks. Place some of the fat into
a
nonstick frying pan and cook over a medium heat to render it. Discard
any solid fat.
- Raise the heat to high and fry the steaks in the pan for 2
minutes
each side. Reduce the heat and cook for up to 2 - 3 more minutes each
side. Eight minutes time will give a well-done steak; reduce the
Cooking time by half for rare meat. Remove the steak from the pan and
keep warm in the oven.
- Chop the shallots finely and add to the pan juices. Cook
over a low
heat, stirring until lightly coloured. Add the crushed peppercorns,
mustard and brandy.
- Stir in the yoghurt or cream and lemon juice; heat gently
and then serve with new potatoes and a salad or crisp vegetables.
